Mango Spinach Smoothie for Busy Mornings

We all have those mornings where you wake up late, after getting up multiple times with the kids. You’re half-asleep and don’t feel motivated to be healthy. You’re tempted to grab something easy to eat before the kids wake up. Before you reach for that croissant or piece of toast, throw a few quick ingredients in the blender and within 3 minutes (yes, really 3 minutes — no prep) you’ll have a delicious and healthy smoothie that won’t make you feel guilty. Get off on the right foot by taking care of your body first thing in the morning.

As a bonus, you can pour part of the smoothie in a separate cup for the kids, before you add the protein powder. Now all of you are off to a healthy start!

Mango Spinach Smoothie

Quick and healthy smoothie with spinach, cucumber and mango
Prep Time 3 minutes
Course: Drinks

Ingredients
  

  • 2 cups Spinach or 2 large handfuls of washed spinach
  • 2 cups water fill blender with water to the top of the spinach
  • 1/2 cucumber
  • 3/4 cup frozen mangoes or cut up 2 mangoes
  • 1/2 peeled apple use a sweet apple like Honeycrisp or Gala
  • 2 TB chia seeds optional for added fiber

Method
 

  1. Add spinach to the blender and fill to the top of the spinach with water.
  2. Add the 1/2 cucumber (chop into 4 or 5 pieces).
  3. Blend on Smoothie mode or if using a different blender, turn to max speed for 30 seconds or until blended.
  4. Add 3/4 cup frozen mangoes.
  5. Add 1/2 a peeled apple (chopped in fourths)
  6. Add 2 TB chia seeds
  7. Blend on Smoothie mode or if using a different blender, turn to max speed for 30 seconds or until blended.
  8. Optional: add 2 scoops of protein powder and blend again on Smoothie mode or if using a different blender, turn to max speed for 30 seconds or until blended.

Notes

This smoothie recipe is a great “base” recipe. You can add 1/2 cup of Greek yogurt, 2 TB of hemp seeds or add 1 TB of honey, maple syrup or agave syrup if you want it sweeter. Any plain or vanilla protein powder will taste good in this smoothie. You can also use frozen strawberries instead of frozen mangoes. If mangoes are in season, I opt for fresh mangoes and then add a handful of ice cubes.
