- Cook the rinsed lentils in the Instant Pot
- Add the red lentils and water or vegetable broth to the Instant Pot.
- Cook on High Pressure for 3 minutes.
- Let the pressure naturally release for 5 minutes, then quick release any remaining pressure.
- Drain off any extra liquid, then mash the lentils lightly with a fork. Let them cool for a few minutes.
- Cook the mushrooms
- While the lentils cook, heat the olive oil or butter in a skillet over medium heat.
- Add the finely chopped mushrooms, leek or onion, and grated carrot if using.
- Cook for 8–10 minutes, stirring often, until the mushrooms are very soft and the moisture has cooked off.
- This step keeps the cakes from getting soggy and makes the mushrooms taste mild and savory.
- Make the lentil cake mixture
- In a mixing bowl, combine: mashed lentils, cooked mushroom mixture, Parmesan, mozzarella, egg, breadcrumbs or oat flour, Greek yogurt or cottage cheese, garlic powder, salt and nutritional yeast (if using),
- Stir until the mixture holds together.
- The texture should feel like soft cookie dough. If it feels too wet, add 1 tablespoon more breadcrumbs or oat flour at a time.
- Shape the patties
- Scoop the mixture into small toddler-sized patties or nugget shapes.
- You should get about 10 small patties.
- Cook the patties
- Heat a little olive oil or butter in a skillet over medium heat.
- Cook the patties for 3–4 minutes per side, until golden brown and warmed through.
- Let them cool slightly before serving.
- Make the dip
- In a small bowl, stir together the Greek yogurt, cream cheese or mayonnaise, garlic powder, and optional shredded Parmesan or mozzarella.
- Serve on the side for dipping.

Preheat the oven to 400°F. Place the lentil patties on a parchment-lined baking sheet. Lightly brush or spray with olive oil. Bake for 15–18 minutes, flipping halfway through.
